Google Photos sorts your photos by date, but you might want to have a more specific filter. For this, albums will help you. So how is the album created?
Open the Photos app. Click on the albums at the bottom. Then, click the + sign in the new album section on the page that opens.
First choose a title, then start the photo selection process. Save it later.
This method adds specific photos to the same album so you can view photos from that album later.
You can then add photos to the same album. You can put other photos in the same category into the same album to filter them.
